ROLLED OATS FOR BREAKFAST
When it comes to quick and easy breakfasts that my kids never get bored of, breakfast egg muffins and anything with oatmeal like overnight oats or baked oatmeal are their favorites during the week.
This Strawberry Oatmeal takes less than 20 minutes to make on the stove and is perfect now that it’s strawberry season. It’s a classic stove-top oatmeal recipe that’s healthy, filling and cooks up creamy and delicious.
You could say it’s kind of like having dessert for breakfast except without the guilt since it’s refined sugar free, dairy free, gluten free and vegan friendly.
IS STRAWBERRY OATMEAL HEALTHY?
A bowl of oatmeal is high in dietary fiber and packed with protein. Using certified gluten free rolled oats and dairy free milk makes it a healthy and nutritious gluten free and vegan breakfast option.
Plus, you can’t beat how simple this strawberries and cream oatmeal is to customize. Serve it plain with a splash of almond milk or dress it up with your favorite toppings.
INGREDIENTS YOU NEED:
- old-fashioned rolled oats
- almond milk (or use your favorite milk or cream)
- pinch of salt – brings out the flavor
- fresh strawberries
- vanilla
- sugar free chocolate chips or melted chocolate – option for garnish
HOW TO MAKE STRAWBERRY OATMEAL
- Liquid to Oatmeal Ratio:My preferred way to get creamy oats is to keep the liquid-to-oatmeal ratio just a bit over 2-to-1. For a single serving, it’s about 1/2 cup dried rolled oats and 1 1/4 cup of water / milk.
- Bring to a boil over medium heat, then reduce the heat:The best way to get all the oats to cook evenly is to boil the liquid first, then add the oats and a pinch of salt (this brings out the flavor). For the creamiest bowl of oats, use all milk instead of water.
- Stir every so often:Once the oats and liquid come to another soft boil, reduce heat to medium-low and stir every so often, until the oats are creamy, thick and plump – usually about 10 minutes or so.
OLD FASHIONED OATMEAL VARIATIONS:
So when it comes to oatmeal, what are your favorite oatmeal toppings? As you can see from this oatmeal post, there are tons of toppings you can add to make your classic stove-top oatmeal delicious.
A few tasty ideas include:
- a natural or low carb sweetener such as honey, sugar free maple syrup, Sukrin Gold, monk fruit sweetener, Stevia etc.
- fresh or freeze-dried berries: strawberries, raspberries, blueberries, blackberries
- nut or seed butter: peanut butter, almond butter, cashew butter, pumpkin seed butter or sunflower butter
- toasted coconut flakes
- chopped nuts – pecans, walnuts, peanuts,
- seeds – pumpkin seeds, sunflower seeds
- sliced bananas, kiwi, peaches, pears, chopped or dried apples etc.
- drizzle of melted chocolate or chocolate chips
MAKE AHEAD BREAKFAST
What I love about this oatmeal recipe is that it works great for meal prep. Just make a double batch and store it in an airtight container in the fridge. That way you have it on hand in the morning, you can reheat it in the morning either in the microwave or on the stove.
Just remember to add a little bit of liquid to help it get nice and creamy again.

Ingredients
- 1/2 cup rolled oats , use gluten free as needed
- 1 1/2 cups almond milk , or use your favorite milk
- 1/4 teaspoon fine sea salt
- 1/3 cup chopped strawberries plus extra slices for topping, if desired
- 1-2 teaspoons sweetener , optional - coconut sugar, maple syrup, honey, SWERVE, stevia or monk fruit sweetener
- 1/2 teaspoon pure vanilla extract , optional for topping
- 2-3 slices freeze-dried strawberries , optional for topping
- melted chocolate
Instructions
STOVETOP METHOD:
Combine oats, milk and salt in a medium pot over medium high heat. Bring to a boil, then reduce heat to low and a gentle simmer. Do not leave unattended.
Once base recipe reaches desired level of creaminess, stir in strawberries, vanilla (and sweetener if desired) until mixed through.
Divide into bowls and more milk as desired and top with fresh strawberry slices and melted chocolate before serving, if desired.
